In other news. Here's some food (these pictures are really crappy. forgive):
Latin Vegan by Terry Romero has turned out to be one of my best cookbook purchases of the last year. Someday if I ever have the time I would like to cook through it, in the meantime I will do what I can.
On Tuesday I thought I would make lots of food for the rest of the week so that I could focus on doing homework. That went over really well...I made lots of food, and still haven't gotten much done.
I was going to make a posole with pintos but I majorly overcooked them so instead I made refried beans.
Here they are cooking on their way to becoming the light brown mush we all know and love
Naturally I had to make tortillas to go along with my beans
I also made a big pot of feijoada (I'll take pictures tomorrow when I eat some) with portobello and shiitake mushrooms instead of sausage and ham. The shiitake was an excellent idea I came up with on my own (the portobello was in the original recipe).
I decided to save the feijoada for later in the week since the black beans were taking forever to cook and since I couldn't find hominy anywhere just made a random "taco soup" instead.
(It tasted better than it looks)

As a mexican (and food lover), I can say that your tacos look quite nice.
And I just felt like eating some pozole... Should've bought some yesterday when I could...
Anyway, I don't know what a taco soup could be, but good luck!
