I was in the throes of a mini meltdown and could not think about how I was going to get through the night let alone dinner so Max and I decided to go out. We went to Life Alive since Max hasn't gotten to try it yet and it is pretty cheap (we got dinner for two, and a package of cookies for $14!)
I love the silly names of everything on the menu and their rice/quinoa bowls remind me of one of my favorite cookbooks ReFresh by Ruth Tal and Jennifer Houston (Make any of those rice bowls! They're excellent!).
I had "The Emperor" minus the corn, plus beets and broccoli and subbed cheddar style Daiya for the real cheese.
Max had a "Green Goddess" and the sauce on it was SO GOOD (they call it "ginger nama shoyu")
This morning when I was deciding what to have for breakfast I remembered that we still had a ton of kale in the refrigerator from when I went crazy at the farmer's market last week. I decided to try and make my own "ginger nama shoyu" sauce and eat some steamed kale over quinoa. I also added some slivered almonds and avocado. It was a great idea.
"Betty's gonna show you sauce":
1 inch chunk of fresh ginger, chopped
2-3 cloves of garlic, chopped
3 tablespoons tamari, shoyu or other soy sauce
2-4 tablespoons tahini
water
Plop everything except the water into the blender. Blend until smooth. Add water until you've reached the desired consistency.
I think this would probably be great with some lemon but I didn't have any. Try it and let me know how that goes for you.
